Garlic is tied to dry in two barns at the farm, from late August until the end of the season. Blue Heron Farm grows between 6-8 varieties of garlic through the season, with both hard-neck and soft-neck varieties. 'Blue Heron Softneck' and 'Blue Heron Hardneck' are both varieties that we have now grown continually for 20 years.
